Hi, Anyone out there got a nice recipe for red cabbage. I never know what to do with it and always end up buying it ready made because it tastes better than when I try to cook it.

shredded red cabbage
red wine vinegar tablespoon
bramley apple or two peeled and sliced
onion sliced
brown sugar a couple of tablespoons (add more or less depending on taste)
small amount of water

add all ingredients to an ovenproof dish and braise for approx 2 hours.
you can add or remove items as taste I find the slower you braise the tastier the red cabbage.
You can saute the onions and apple and cabbage first to speed things up if you want.

Just be carefulnot to add too much liquid as you want the finished dish thick.

you can add cinnamon or other spice to your taste.

sounds delicious and will give it a try.

also nice with just strips of bacon and red onion, mash on the side

Its also lovely in the summer as an alternative to white cabbage in coleslaw. You can also add some apple to the coleslaw to make it a wee bit sweeter.

To make the red cabbage colslaw:-

1/2 red cabbage, shredded
1 red onion, sliced
1 clove of garlic, thinly sliced
2 carrots, grated
juice 1 lemon
2 or 3 tbsp mayonnaise
salt and pepper

Mix all ingredients together and season to taste.

Lovely served with steak or pork, and great for bbq season!!!

After my delivery on Tuesday I now have 2 cabbage, so wondered what I could do with them. Tonight, I am going to do mash potato and gammon with cabbage and bacon. Basically, blanch the cabbage in boiling water and drain. Melt some butter in a frying pan, add some chopped bacon and fry, then add the cabbage with salt and pepper and stir fry for a few minutes. Optional addition - couple of dessert spoons of cream finishes it off lovely.

Then over the weekend I am going to do colcannon - mash potatoes with cabbage. Firstly make the mash potato and steam the shredded cabbage. Mix together, add a couple of spoons of cream and season well with salt and pepper. You can also add some cooked chopped carrot too. Lovely with venison sausages and red wine gravy!!

nothing nicer than mash with gravy! and there is red wine in that gravy then Mmmmmm!
